I had the pleasure of dining at Porsena last night for what turned out to be an unbelivabley delicious tasting. Salvatore Denaro has had a big impact on Sara Jenkins and in her own words,” he is my biggest inspiration, for the pure honesty of his food“.
Salvatore keeps to Italian tradition when creating his modern dishes. He uses ingredients, as simple as eggplant and ricotta, to turn a dish into a masterpiece. Although I didn’t get a chance to speak to him, I could see how vibrant his personality was and it certainly came out in his food.
